Step-by-step easy healthy toddler pancake recipe
Here's a simple, healthy pancake recipe that's perfect for toddlers:
Ingredients:
1 ripe banana
1 egg
1/4 cup oat flour (you can grind rolled oats in a blender to make oat flour)
1/4 tsp baking powder
Pinch of cinnamon (optional)
Coconut oil or butter for cooking
Instructions:
Mash the banana in a bowl with a fork until it's fairly smooth.
Add the egg and whisk until well combined.
Add the oat flour, baking powder, and cinnamon (if using) and stir until just combined. The batter will be quite thick.
Heat a non-stick pan over medium heat and add a teaspoon of coconut oil or butter.
Use a tablespoon to scoop the batter into the pan, and flatten each pancake slightly with the back of the spoon.
Cook for 2-3 minutes, or until the edges start to look set and the surface of the pancake is covered in bubbles.
Flip the pancake over and cook for another 1-2 minutes on the other side, or until golden brown.
Repeat with the remaining batter, adding more coconut oil or butter to the pan as needed.
